Raw Mixed Veggie Rice
Being raw most of the year has made me get my food hacks right on which foods will be nutrionally dense or make me feel energetic, or at the same time give enough calories. Red rice poha is one such ingredient, which can fit the bill perfectly. A grain which can be enjoyed in all possible ways, raw, steamed, powdered or just plain.
- 1 cup red rice poha, soaked and drained
- 1/2 cup grated fresh coconut
- 1 grated carrot
- 1/2 cup mixed bell peppers
- 1 tomato, finely chopped
- 1/2 raw mango, grated
- Salt to taste
- 1 tbsp lemon juice
- Lots of fresh coriander, chopped
- Few roasted peanuts for the crunch
- Black raisin for the garnish
- Mix all the ingredients together in a bowl. Put in a small bowl and place it on the plate upside down, remove the bowl, garnish with raisins and enjoy!
