Potato Barfi, Beetroot Barfi
Now that I have given you two of my favourite savoury dishes of potato.It would be unfair not to give you guys a sweet recipe of my favourite tuber. This recipe shows the versatility of potato, its ability to be on both ends of the spectrum.
With Ganapati Bappa in town I got a chance to offer him ‘Prasad’ at a friend’s house and I didn’t want to do the regular stuff. And right now being in a fast track mode I wanted something quick and easy. Hence was born the super easy POTATO BARFI.
When I was a kid during Diwali days I had seen mom slogging over this dish to get the perfect results with lots of clarified butter and sugar and it tasted awesome. But this version is an easy peesy 3 ingredient recipe with minimal supervision and comes together in a jiffy. And if you ask me about the results, they were awesome too (Though you can never beat ‘Ma ke haath ka khana’ [Mom’s food]).
Below I have also provided with separate version that can be made with beetroot. And beetroot hating people I challenge you to not like beetroot after this. My niece who is not majorly into veggies went for a second helping. Score!!
Ingredients for the Potato Barfi
- 2 cups grated boiled potato
- 1 cup grated fresh coconut
- 1 cup jaggery / raw sugar. (if you love super sweet you can increase the amount)
- A pinch of salt
Ingredients for the Beetroot Barfi
- 2 cups grated boiled beetroot
- 1 cup peanut powder
- 1 cup jaggery/raw sugar
- A pinch of salt
Method for the Potato Barfi
- Mix all the ingredients together in a microwave safe dish.
- On high setting cook for 5 mins. Remove and stir well.
- Cook again for 5 mins. Stir well. Repeat this process this the mixture dries out and can be cut into barfi squares. (Refer to the picture below).
- Cooking depends on the water content of potatoes and coconut. More water, more time it will take. Mine took about 16-18 mins.
Method for the Beetroot Barfi
- Repeat the process similar to potato barfi. Enjoy!!
- P.S These recipes can be made without coconut and peanut if you are not a big fan.
- You can also add additional flavourings like cardamom, saffron, cinnamon.
