Jowar Cashew Butter Cookies
I have been meaning to buy this cookie jar for a long long time. So today I picked it up and all the way home darling hubby was teasing I wouldn’t have the time to fill it up. So to prove him wrong I started baking as soon as I stepped inside the house.
This cookie recipe was on my to do list for quite some time. People if you love the Good day butter biscuits this is an amazing substitute, for it very close to its taste and it’s jaggery free and gluten free too. Unbelievable goodness!!..They turned out so good I was worried they would not reach the cookie jar…
- 1 cup jowar flour
- 1 cup dry dates powder
- 1/3 cup cashew butter (recipe below)
- 2 tbsp date paste (optional)
- 1/4 cup non dairy milk (I used soymilk)
- 1/2 tsp baking powder
- 1/4 tsp elaichi powder
- A pinch of salt
- In a mixing bowl add the flour, baking powder, elaichi powder, salt and dry dates powder and mix well.
- Add the cashew butter and mix with your finger tips to form crumb consistency. Add the date paste if you want more sweet.Mix well.
- Make a dough by adding little non dairy milk at a time.
- Cover and keep aside for 10 mins.
- Roll out the dough till its 1/4th inch thick and using a cookie cutter cut out the cookies.
- Preheat oven to 180C for 10 mins. Bake the cookies till the edges are brown about 8-10 mins.
- Remove on a wire rack and cool down.
- Store in an airtight container.
