Banana Walnut Bread

My birthday post created quite a furor. The birthday girl herself not eating the birthday cake made headlines among friends and family. Reactions varying from ‘Oh! Poor you, you didn’t even eat your birthday cake’ to ‘Are you mad?? Atleast one day you could sacrifice your extreme diet.’
No thanks guys, I definitely don’t miss eating a cake filled with saturated fat, cholesterol and refined sugar. I really don’t consider it a sacrifice. Also living in a social setup especially as we live in India if I start acknowledging everyone’s wishes and sentiments I will never be eating healthy ever again.
Earlier when I just landed here I used to feel awkward explaining to people why I won’t be eating out and why if they wish to invite me I can’t have their regular meal. But as days have passed, I have started being more expressive and people who really care support me all the time. Right from my grannies to my friends wherever I have been invited I do get plant based oil and sugar free options. It’s all about placing your health and wellness before everything else.
So as a treat to myself and having so called missed the birthday cake. I baked myself a nice, succulent, ultra-delicious BANANA WALNUT BREAD. During my non vegan days I used to make these and sell and they turned out pretty amazing. So I had to come up with my signature recipe in the vegan format. After a lot of tweaks and trials this is what tasted the best.
It’s a very easy and healthy recipe to put together and is enjoyed by one and all. My younger one being the newest fan on the block.

  1. Preheat the oven at 180C/350F. Line a loaf tin with parchment paper.
  2. Bowl A- Mix all the ingredients well with a whisk and keep aside.
  3. Bowl B- Beat all the ingredients together till the sugar is syrupy.
  4. Bowl C- Mash the bananas with a fork. Add milk and baking soda and keep aside for 5 mins.
  5. Mix Bowl B and Bowl C till they are mixed well.
  6. Add the flour mixture from bowl A to the banana sugar mixture and mix well. DO NOT OVERMIX.
  7. If you feel the batter is too thick add 1 to 2 tbsp of soya milk.
  8. Pour the batter in the loaf tin, sprinkle few chopped walnuts on top and bake it in the oven for 40-50 mins till a toothpick inserted come out clean.
  9. Tips-Please measure the ingredients precisely do not use your judgement. Use pure vanilla extract as the artificial essences can give a bitter aftertaste.
