Raw Mango Curry
Simple Ghar ka khana… Raw mango curry, shredded carrot cucumber salad with oil free tadka, oil free pickle and brown rice.
The GSB (Goud Saraswat Brahman) in me is very happy.
- 1 cup diced unpeeled raw mango
- 1/2 cup shredded fresh Coconut
- 1 tsp brown rice flour
- 1-2 dates For the tempering
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1/2 tsp fenugreek seeds
- 1/2 tsp turmeric powder
- Red chili powder for taste
- Salt to taste
- Heat a thick bottom steel pan, add the mustard seeds and let them pop.
- Add the urad dal and methi seeds and roast till you can smell their aroma.
- Add the raw mango pieces and 1 cup water. Then add the chili powder and turmeric. Bring this to a boil. Let the mango piece soften a little.
- Grind the coconut, brown rice flour and dates to make a very fine paste.
- Add this paste to the mango curry and mix well.
- Season with salt as per taste. Bring it to a boil and turn the heat off.
- Serve hot with rice.
