“Paneer” Mix Sabzi
If you’re unable to control your nut intake, then this sabzi for lunch or dinner can satiate your taste buds.
Thick gravy made with peanut powder can make up for all the richness of cashew or coconut cream you’re looking for in a sabzi.
Peanut unlike traditional nuts such as almonds, walnuts etc. are a legume packed with nutrients and healthiest source of protein.
Also the paneer added to this sabzi is not the regular one but made from soy milk. Tofu though being a soy product is a very good source of protein and can be enjoyed once in a while. For a person who used to survive on dairy paneer once upon a time, this sabzi comes in handy when i crave for some paneer. Try and enjoy the awesome combinations of vegetables and tofu in a thick creamy sauce.
For the paste
- 1 medium onion, finely chopped
- 2-3 garlic, chopped
- 1/2 inch ginger,chopped
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 tbsp peanut powder
- 2-3 medium tomatoes, chopped
- salt to taste
Vegetables
- 2 cups mixed vegetables (carrots, green and red capsicum, green peas)
- Aurosoya Tofu, cut into pieces (or any other organic brand if aurosoya not available)
- Heat pan, add all the ingredients of the paste, cook till fragrant adding little water. Cool and make a thick paste.
- Steam vegetables till done. (about 4-5 minutes)
- Heat a pan, mix the paste, vegetables and tofu.Simmer for 5-6 minutes Garnish with coriander sprig and serve hot.
