Open Faced Sandwiches
What’s on my toast!!…One of my favorite snack, brunch and dinner is open faced sandwiches. This is also one of the good way to finish leftover food in your refrigerator. You can grill it in the oven or just toast the bread and pile the veggies on it….
So the million dollar (rupee) question is Which Bread??…
People in the US you just have to visit Whole Foods Store bakery section and look for the whole wheat Italian bread or the French Baguette. It’s completely oil free and preservative free.
Here in India I have yet to find an oil free bread (I did find one but it was made from Maida/ all-purpose flour/ refined flour, which is a big NO-NO) So as a near best I got the Britannia 100% whole wheat Bread (I am not recommending or promoting this bread but this is what I chose to quench my bread craving) 4 slices is 260 calories and 0.9 gm (<9 calories) vegetable oil with minimum preservatives. And till I can bake my own oil free bread (which I will definitely one day), this is what I am eating occasionally.
So today I toasted the bread in a toaster, just slathered some left over Mint chutney (recipe from my previous post) on it, arranged some sliced cucumber, boiled potatoes and green pepper, topped it with some salt pepper, sriracha sauce (chilli sauce) and mustard sauce and landed in yumminess heaven. For some added yumminess you can also sprinkle some nutritional yeast or coconut chutney .
A similar version of this sandwich which I made a few months back included applying the black eyed pea- walnut dip on slices of whole wheat Italian bread arranging spinach leaves, green pepper slices, mushrooms, thinly sliced onions and spring onions topped with nutritional yeast, sriracha sauce, salt and pepper. Grilling it in a preheated oven at 350F/180C for 10-12 mins. (Keep an eye on it otherwise the veggies may dry out).
Possibilities are endless!!…Just whatever you like or have in hand can land up on this amazing sandwich….
