Coconut Butter

Missing ghee in your food…worried that you are not getting enough lubrication for your nerves, muscles and bones because of lack of ghee (as mentioned by your doctor) Don’t worry there is a solution for that too in the Vegan world and that too without the deleterious effect of consuming a dairy product.
COCONUT BUTTER!!….this has been an actual revelation for me and it’s ridiculously easy to make. Goes well with anything and everything. Sometimes when the kids are at their fussiest best about food- whole wheat chapati rolls with coconut butter and jaggery come to the rescue (in marathi “gul toop poli”- my favourite dish from my childhood) as well as dal rice topped with coconut butter (“varan bhaat toop” in marathi).
It also goes well in baked goods like cakes, cookies, cheesecakes etc). I think the best use of coconut butter is in the “prasad” (offering to god) during Satyanarayan pooja. You will definitely not miss ghee anymore!!

  1. Add the coconut to the grinder (it should be at least an inch above the blade).
  2. Grind for a good 7-8 minutes, scraping the sides at regular intervals till you get runny coconut butter.
