Cakey Oatey Chocolate Chip Cookies
Baking is meditative and such a mindful process for me and I always bake when I am craving for some baked goodies . So yesterday when I was browsing through tonnes of vegan chocolate chip cookie recipes for some baking inspiration I came up with my own cookie recipe!! These cookies are so cakey , a little crispy , slightly chewy that they satisfy my cravings of a chocolate chip cupcake and a chocolate chip cookie ! Try these cakey oatey chocolate chip cookies and you won’t be disappointed!!
For Dry
- 1/2 cup rolled oats flour
- 1/4 cup dry coconut powder
- 3 tbsp banana flour
- 1/4 cup almond meal
- 1/2 tsp rock salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
For Wet
- 2 tbsp flax meal + 6 tbsp warm water
- 1/3 cup + 1 tbsp molasses
- 1/3 cup coconut butter
- 1 cup chocolate chunks/chips
- Make the flax eggs by mixing 2 tbsp flax meal to the 6 tbsp warm water and letting it sit aside for 5 minutes. Mix all the wet ingredients in a bowl separately.
- Also mix all the dry ingredients in a different bowl, fold the wet ingredients in the dry ingredients and mix well.
- Now the cookie dough batter should be a fudgey dough. Chill this dough in the refrigerator for an hour at least.
- Line the baking tray with parchment paper and scoop a spoonful of the cookie dough and place on the parchment.
- Flatten the dough and shape the cookies. Preheat oven at 180 degree Celsius.
- Bake the cookies for 10-15 minutes.
- The bake time really depends on your oven and how soft or crispy you like your cookies so keep an eye on the cookies to avoid a burnt batch.
- Also let the cookies sit in the oven for 10 minutes after the bake time . And the cookies will crsip even more on cooling.Enjoy!
