Amaranth Peanut Butter Chocolate Filled Cookies
Milk and cookies, this epic combination never goes out of fashion, I grew up, dipping my biscuits in tea/milk/coffee, however after adapting a whole plant based lifestyle, this was a dream until recently I recreated my childhood making chocolate filled cookies and had it with hot almond milk.
- 1 cup amaranth flour
- 1/4 cup raw banana flour
- 2 tbsp peanut butter
- 1/4 cup soy milk
- A pinch of salt
- 1 cup palm sugar or jaggery powder
- 2 tbsp cacao powder
- 1/2 tsp baking soda
- 1 tsp baking powder
- Few pieces of dairy free dark chocolate
- Mix all except the chocolate and make a dough. Make small balls of the dough, fill each with a small piece of dark chocolate and flatten it to make a cookie.
- Bake in the preheated oven for 20-25 mins at 180 deg.
