Stuffed Cheesy Mushrooms
Craving for something cheesy but don’t want to eat bread or grains and nothing heavy. I have just the right solution which comes together in 5 mins (provided you have vegan cashew cheese in your fridge).
I just love mushrooms always have and always do. Let me clear a doubt as I write this recipe. VEGANS CAN EAT MUSHROOMS. it’s a food product (not something with a central nervous system). So please world don’t roll your eyes and whisper because I eat mushrooms.
Anyways getting back to the dish and recipe. I don’t know why I was so scared about making it…so I just made it spontaneously without any planning and wow I was in cheesy mushroomy heaven. And I can definitely say it was delicioussssss because my 2 kids and I had an argument on who should have the last one. (Yes you can call me a selfish mother but good food is good food)
- 15-20 button mushroom, cleaned and stem removed
- 1/4 cup vegan cashew cheese
- 1 cup finely chopped vegetables like colourful peppers, carrots, spring onions
- 1/2 tsp chilli flakes
- 1 tsp Finely minced mint leaves
- Salt n pepper to taste
- Preheat oven to 200C. Line a baking tray with parchment paper.
- In a bowl mix all the ingredients except mushrooms.
- Take a mushroom and place 1 tsp of the cheese filling in the depression from where the stem was removed.
- Repeat the process for all the mushrooms.
- Bake the mushrooms for exactly 5 mins till the cheese slightly browns.
- Garnish with parsley or coriander leaf and serve hot.
