Carrot Chana Fudge Squares
My son loves the stuffing inside the traditional puran poli a delicacy from Maharashtra. But as a chef it’s so disheartening to see that your effort has gone waste when your son eats the stuffing and leaves the cover.
So my mom came up with this amazing idea of making the puran in form of fudgy squares and incorporate some wholesome nutrition too. These squares were so good that we adults couldn’t resist gulping them down and the best part (if you know me you will know) it has only 4 ingredients. Yes you read it right 4 ingredients.
- 1 cup chana dal, soaked overnight and pressure cooked
- 1 cup diced unpeeled carrots
- 3/4 cup organic jaggery powder
- 1 tsp cardamom powder
- Steam the carrots till they are well cooked. (Should be mushy to touch)
- Mix the chana dal, jaggery and cardamom powder together and cook it on slow heat till the jaggery melts and the mixture starts leaving the sides. It takes about 20-25 minutes.
- Cool down this mixture and add to the food processor along with the carrots to make it into a fine mixture. Add small quantities, don’t overload the processor.
- Set this mixture into a steel plate and chill it for 2 hours.
- Cut into squares. Garnish with nuts if required but not necessary.
