Finger Millet Pillow Cookies
As I always say baking is meditative and baking heals my soul . I love to bake ! I am always excited when baking whole foods plant based because the end result of the bakes always suprise me. And I am always grateful to my dear mentor Madhura Vayal who taught me how to bake whole foods plant based treats. She is a fabulous baker herself !
These pillowy finger millet cookies with hint of cardamon are gorgeous.
Here’s the recipe
For Dry
- 1 cup Finger millet flour
- 1/4 cup dessicated coconut
- 1/4 tsp crushed cardamom
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp rock salt
For Wet
- 1 flax egg(1 tbsp flax meal + 3 tbsp water )
- 1 tbsp cashew butter
- 1/4 cup + 1 tbsp jaggery powder
- 1/4 cup coconut milk (or as needed to make a pilable dough)
- Prepare the flax egg by mixing flax meal and water .Keep this aside.
- Mix all the dry ingredients in a bowl. Mix all the wet ingredients in a separate bowl.
- Slowly mix in the wet mixture in the dry mixture.
- The cookie dough will be soft but a little gooey too. Now line a baking tray with parchment paper and scoop out rounds of the cookie dough.
- Pat the dough and shape the cookies on the baking tray with help of your fingers or back of a spoon.
- Preheat the oven at 170 degree Celsius and bake these beauties for 12-15 minutes. Let them cool on a wire rack. Enjoy!
