Jaggery, roti crumble with dollops of ghee (we call it gorwali bhuseli rotli in gujarati) was always my soul food during my non vegan days. So today, when I was craving for this warming and heartening dish with dollops of ghee, some homemade coconut butter came to my rescue! This dish is sweet and welcoming and very easy to make. You can even use leftover rotis to make it.
2 rotis (6 - 7 inch diameter)
1 tbsp coconut butter
1/8 cup jaggery
Crumble the rotis with hand , alternatively you can coarsely grind the rotis.
In a pan heat the jaggery and coconut butter, once all the jaggery and coconut butter is melted turn off the heat and add in the crumbled rotis.
Coat the crumled rotis well with the jaggery and coconut butter mixture. Serve warm . Enjoy!
